I made the calamansi cupcakes. I doubled the recipie. Made for my daughter’s wedding after party. They were so delicious. Had for breakfast the next day. I now grow a calamansi tree. Live in Florida. Easy to buy. Will make all the other recipies. My friend is Filipino and said they were awesome! Thank you for the recipie.

This was really good! I recently tried 4 different copycat Panda Express & Pei Wei recipes, and this one was the best! They removed sweet fire chicken from the menu a year or two ago and I still miss it, so I'm really happy to see how easily I can make this at home. I used crispy oven baked tofu instead of chicken and it was still absolutely delicious. I'm looking forward to exploring more of your recipes! Thank you for developing this one!
